Flaxseed sandwich bread great with ham

There are times when a low carb lifestyle can seem a little inconvenient. You just want to grab a sandwich on the go what do you do? There are the lettuce or cabbage leaf wraps which are great, but sometimes you just want something like bread. Of course there isn’t any low carb substitute that I’ve tried that actually is like bread but there are things that you can put either side of some ham.

This is the one we tried out this week, having finally found flaxseed on the island. Adapted from djfoodie, a friend got the whole brown flax from the nut shop in Rhodes town and ground it for us. The rosemary was picked out of the garden and the chilli is one we dried from our own plants. The olive oil is from our own after our olive picking adventure in November and the almonds were grown on the island.

Flaxseed Sandwich Bread

Ingredients

  • 1 cup ground flaxseed
  • 1 cup ground almonds
  • 1 1/2 tbsp baking powder
  • 8 eggs whisked
  • 1/4 cup extra virgin olive oil
  • 1 dried chilli finely chopped
  • 3 sprigs of rosemary finely chopped
  • A small sprig of fresh dill chopped
  • 1/2 head of garlic crushed
  • 1 tsp ground sea salt

Method

Pre-heat your oven to 180C.

Grease a 9″ square cake tin with olive oil.

Mix all the dry ingredients together in a large bowl but only half the salt.

Whisk the eggs then add the olive oil to the eggs. Pour the wet ingredients into the dry and mix thoroughly. At this stage it is very runny don’t worry.

Pour the mixture into your prepared tin and sprinkle the remaining salt on top.

Bake in the centre of the oven for 25 minutes until golden brown and a little risen.

Cool on a wire rack and remove from the tin once cool enough to handle.

Cut into 8 pieces, slice each piece in half to create 2 slices. Toast the slices before using.

This is really great tasting, slightly nutty and lovely just toasted with butter on. My chillies are very hot so it had a definite bite to it. The garlic flavour is really subtle as is the rosemary. You could chop and change the flavours with different herb choices. I’m thinking of sun-dried tomatoes, olives and parmesan next time. It was certainly great with ham. If you experiment let me know.
