Looking for something low carb, tasty and quick and simple to make? As the weather has continued to be wet a wintry in Rhodes this week, it’s been a time for warm comfort food and soups. I wanted something to dunk in the soup and use to snack on with ham or bacon.
I’ve been experimenting for a while with ground almonds, eggs and cheese and these are my favourites so far. We had them this morning for breakfast, spread with butter and topped with crispy bacon and yes it’s healthy too. Eating like this will reduce your cholesterol, lower you blood sugar and help you lose weight. I know it’s true because it’s working for me check out my progress here.
Ingredients
- 3 cups of ground almonds
- 1 cup sharp cheddar cheese finely grated
- 1 tbsp baking powder
- a dash of cayenne
- 4 eggs whisked
- 4 tbsp butter melted
- ground sea salt
Method
Pre-heat the oven to 180C and line a baking sheet with baking parchment.
In a bowl mix together all the dry ingredients ground almonds, cheese and baking powder, add as much cayenne as you like, and a little ground salt.
In a separate bowl whisk the eggs and the melted butter together, making sure you don’t scramble the eggs.
Then mix the egg mixture into the ground almond mixture.
Now form the mixture into loose balls and place on the baking parchment.
Place in the centre of the oven and bake for 15 – 20 minutes, then reduce the temperature to 140C but bake for a further 5 minutes until golden brown and cooked through.
These are great as they are, sliced in half with little butter on or topped with bacon. Let me know how you eat yours?

These are great, and I make and freeze them. They’re a perfect ‘roll’ with butter or cream cheese, with a salad, soup or as a snack, but my favourite is a Cheese Cream Tea: halve and spread with butter, add a slice of cheese and slice of tomato, top with cream cheese and a grind of pepper. Serve with your favourite cup of tea! Sublime.

I just tried these. I halved the recipe as they are only for me. Amazing! I added a bit of Parmesan and garlic powder. I will definitely make these again!
